Pimento Cheese

This is great with crackers, tortilla chips, pretzels, and veggies. It's super fast and easy. Give it a try.


  • 12 ounces cream cheese

  • 4 ounces cheddar cheese, grated (1 1/2 cups)

  • 2 jars (2 ounces each) pimentos, drained

  • 1/8 to 1/4 teaspoon Tabasco sauce

  • Coarse salt and freshly ground pepper


  • Put in the food processor and blend until coarsely pureed. Add salt and pepper. Serve










    Homemade Pizza

    I love pizza. It is an easy, quick meal that I can have ready in no time. I make my own pizza sauce with tomatoes out of my garden and then I can it and have it all year. It is so handy!

    Pizza Dough

    1 pkg. dry yeast or 2 1/2 tsp.
    3/4 cup very warm water
    2 cup flour
    1 tsp. salt
    1tsp. sugar

    Toppings of your choice

    1. Soak the yeast in the water for 5 minutes. add flour, salt, and sugar, mix to blend. Knead until smooth or flour is well blended, 2-3 minutes. Cover and let rise in a warm place. You can let it rise for 15 minutes and it is good to go or you can let it rise for and hour or so and I think it is better.

    2.  Roll out the dough, I use my hands for this, and just stretch it until it is about the right size and then put it in the pan and pull it to the edges. This will make one 12'' thick crust or two 12'' thin crust pizzas. I also found that if you let it rise longer you can two pizzas out of it and the crust isn't really thin it is just perfect.

    3. Use the sauce and toppings of your choice. I cook mine in a cast iron skillet and it gives it the perfect crust!

    Bake at 450 degress for 10-15 minutes! This is what you end up with...












    Fruit Pizza
    I made this for the July 4th holiday and it was a hit. I love this dessert it is refreshing because of the fruit but sweet and yummy because of the sugar cookie dough and the cream cheese iceing!! You can use whatever fruit you like. You can use store bought dough but I refuse to do that!

    Sugar Cookie Dough
    2 sticks Butter
    2 cups Sugar
    1 tsp. Baking Soda
    1 tsp. Cream of Tarter
    1/8 tsp. Salt
    3 Egg Yolks
    I1 3/4 cups Flour

    1. Beat butter and sugar for 30 seconds until combined. Add sugar, baking soda, cream of tarter, and salt. Beat until combined, scrapping sides of bowl as needed. Beat in egg yolks and vanilla. Stir in flour.

    2. Line a cookie sheet with parchment paper and put the dough on the cookie sheet.



    3. Spread it out with a spatula in an even layer. It might be a little sticky, you just have to work it out into a rectangle.



    4. Bake in a 325 degree oven for about 15 minutes.


    Crean Cheese Frosting
    1- 8oz. package of Cream Cheese
    1/4 cup Sugar
    1/2 tsp. Vanilla

    1. Soften cream cheese and mix with the sugar and vanilla.



    2. Spread on sugar cookie dough.



    3. Add mixed fruit. I used strawberries, blueberries, raspberries, kiwi, and black raspberries.

    4. Cover and chill until ready to serve.









    Easy Dill Dip
    I use this dip all the time with veggies or chip and pretzels. It is really good and very easy. If you are serving a lot of people you might want to double it.

    1/2 cup Sour Cream
    1/2 cup Mayonnaise
    1 tsp. dry Dill
    1/2 tsp. Lawry's Seasoning Salt

    Mix all ingredients together and chill at least an hour before serving. The longer you let it chill the better it is!

    Easy Cinnamon Rolls
    I made these this week and they were yummy! Try them out!

    2 - packages of yeast - approx. 4 tsp.
    5 cups Flour
    1 Tbs. Sugar
    2 1/2 cups warm water
    6-8Tbs. Butter melted
    1/2 cupSugar 
    1 tsp. Cinnamon - I just guessed on this, I put it in until it looks right

    1. Mix Flour, yeast, and sugar together in a mixing bowl
    2. Add the water
    3. Stir until combined, knead just a little - It will be sticky
    4. Cover let rest in a warm place for about an hour or until doubled
    5. Put out onto a floured surface, make sure your hands are floured. Knead until it is not so sticky, adding as little extra flour possible.
    6. Roll out into a large rectangle. You want the dough to be about a 1\2 inch thick.
    7. Spread the dough with half the melted butter and sprinkle on the cinnamon and sugar.
    8. Roll up the dough starting on the long side of the rectangle.
    9. Brush the rest of the melted butter in the pan/pans - I used to round cake pans
    10. Slice the roll into about 1 inch pieces and put in pan
    11. Loosely cover and set in a warm place to rise for about an hour.
    12. Bake in a 370 degree oven for 25 min.

    I added a powdered sugar glaze. A little milk and powdered sugar until you get the consistancy you want!








    Puppy Chow
    This recipe is on the rice chex box. Check to make sure because it was on one box but not the other.

    9 cups Rice Chex or Corn Chex ( I used both)
    1 Cup Chocolate chips
    1/2 Cup Peanut Butter
    1/4 Cup Butter
    1tsp. Vanilla
    1 1/2 Cups Powdered Sugar
    1.  Dump Chex into a large bowl
    2. In a medium microwave safe bowl, put Chocolate Chips, Peanut Butter, and Butter in the bowl and Microwave for about 1 minute, stir and microwave an additional 30 seconds or until you can stir smooth. Stir in Vanilla.
    3. Pour Chocolate mixture over chex mix and stir to cover
    4. Add powdered sugar and stir. ( I mixed the powdered sugar a little and then put the lid on my bowl and shook it well.)
    5. Pour onto wax paper and let it cool.

    Enjoy!








    Chicken Tortilla

    This is an easy casserole. I use this when I have leftover chicken I need to use up! Give it a try!

    1. Chop 1/4 of a green pepper, 1/4 of an onion, and 2-3 cloves of garlic

    2. Chop up your chicken, I used 3-4 chicken thighs

    3. Add 1/2 cup sour cream, and 1 can or 12 oz of cream of chicken soup

    4. I added some Pimento peppers as well, about 1Tbs.
    5. Mix it all up
    6. Use a 9x9 casserole dish..Place two flour tortillas in to cover the bottom and add about a 1/3 of the chicken mixture.

    7. Then add a layer of cheese, whatever kind you want
    8. Then another layer of tortillas and chicken and cheese. End with the tortilla and add cheese on top.
    9. Bake in the oven at 395 degrees for about 30 min. or until everything looks bubbly and a little brown around the edges!


    Serve with Spanish rice and Enjoy!









     Spaghetti and Bacon

    This is a super easy, yummy, weeknight dinner. I love it, but I love just about anything with bacon!
     Try it out and let me know what you think!!

    What you need:
    1 lb. bacon
    1/2 lb. Spaghetti
    2/3 cup Italian Dressing
    Parmesan Cheese
    Salt and Pepper- to taste
    1. Put a pot of water on to boil for the Spaghetti


     2. Add bacon to a skillet, this is 1lb minus 3 pieces, I had a bacon craving that morning:)
    3. Cook spaghetti according to the package directions
    You should end up with this
    4. Crumble the bacon up

    5. When spaghetti is done drain and add the Italian dressing

    6. Then add the crumbled bacon
    7. Stir around in the pot and serve
    Oh! We forgot something...
    Much Better!!
    Well, that was easy!!
    Now I have some bacon grease left, which is great to have to flavor things like green beans and other things. I have been saving the glass jars and bottles from items that I buy at the store. So I had this little container with a lid and it works great for my bacon grease!
    I love it when I can renew and reuse!!













     Easy Pasta with Chicken and Zucchini

    So, I kinda made this recipe up and it turned out pretty good. It's so easy. It all started when I had so many zucchini from my garden i didn't know what to do with them! So I put them in everything.
    You just throw a few things together and you have a meal!
    I forgot a few things in this picture. Chicken, butter, salt, and pepper.
    So this is what I use:
    1/2 lb. Pasta
    1-2 Boneless Skinless Chicken Breast
    2-3 Tbs. Olive Oil
    1-2 Zucchini Sliced - (depends on how large they are)
    2-3 Cloves of Garlic minced (again depends on how large they are)
    4 Sun Dried Tomatoes Diced
    1 Tbs. Butter
    Salt and Pepper to taste
    Lots of Parmesan Cheese (because I love it!)


    1. I start by putting the water for the pasta on to boil.  Cut the chicken into bite size pieces. Heat my skillet over medium heat. Add the Olive Oil to the skillet, then the chicken. Salt and pepper.


    2. Cook pasta according to directions on the box. When Chicken is cooked through remove it from the skillet and set aside. Add the Zucchini, Garlic, and Tomatoes to the skillet. (you may need a little more oil at this point.) Saute until tender. Be sure not to burn the garlic it will cook really fast.
    3. When the Zucchini is tender add the Chicken back into the skillet. Turn off the heat. By this time the pasta should be done. Add the pasta and butter to the skillet with all the other ingredients. Maybe some more salt and pepper. Toss to coat. Drizzle a little more oil. Top with Parmesan Cheese.
    Yummy!

    Serve with Homemade Bread!! Very good. 

    P.S. I will also add fresh Basil at the end if I have it on hand as well as some red pepper flakes to give it a little bite.








    Coming soon... Candy corn.. yummmy! We grow our own popcorn around here and it is so good! But then it gets better..I smother it in this caramel sauce! Oh my, it is addicting!

    Here ya go...
    This is what you will need:
    1 cup of pop corn kernels
    1 stick of butter
    1/2 cup of sugar
    3 Tbs. of coffee - Kinda weird I know but it does make it taste good
    2 Tbs. maple syrup
    1/4 tsp. salt
    Preheat oven to 350 degrees

    1. Pop the pop corn and put it in a bowl, I separate it from the kernels that didn't pop, so you bite into one. I also use this great air popper, available at Bed Bath and Beyond.
    Ignore the ugly counter top. The kitchen has not been remodeled and is in desperate need of a total makeover.
    2. Put the rest of the ingredients in a sauce pan and bring to a boil and boil 5 minutes.
    3. Pour it over the pop corn and stir it up. This works best in a very large bowl.
    4.Then I spread the pop corn on two cookie sheets lined with parchment ( I'm all about easy clean up)
    and bake them in the oven for 5 minutes.
    Let cool and break up the pieces ( they stick together a little) and store in an air tight container 
    (if there is any left to store)
    I love it warm out of the oven!
